The experimental vineyards are located in Lower Nubia.
Experiments have been conducted on the following vine types:

Life

The life cycle is controlled by watering, and is the same no matter the vine type. Life is important if you want to propagate your vines: you cannot take cuttings once life reaches 0.

Life starts at 120 when planted and immediately begins decreasing.
Life drops below 30 at around 6 1/2 hours after planting, remains below 30 for about 2 hours, then begins increasing again.
Life increases above 90 at around 16 hours post planting, reaches a peak of 93 at around 17 1/2 hours after planting, then begins to decrease again.

In tale 1, viticulturalists were told to water before the peak if they wanted to keep their vines from dropping to 0 life. I have not yet tested this in tale 2.

Residual Sugar

Residual sugar is converted to alcohol while wine is fermenting in the barrel.

The residual sugar of a particular set of grapes depends on the vine type, and on the age of the vine at harvest.

Many viticulturalists believe that residual sugar increases every 24 hours. The data I have show that residual sugar has not increased after 24.5 hours, but has increased after 27.5 hours. I need to do more research to determine the exact time when residual sugar increases.

Honey Rose vines add residual sugar at the rate of 2 every sugar cycle. All other vines available at this time add residual sugar at the rate of 1 every sugar cycle.

Fertilization & Grape Growth

Grape growth is controlled by fertilization. Grape count peaks a certain amount of time after fertilization, then grapes start disappearing until the grape count reaches the original value.

If you fertilize while there are grapes on the vine, the grape count stops at that number, then begins rising again to a new peak. The grape count at fertilization is the new minimum number of grapes.

After much research, it appears that the time from fertilization to peak grape count is random. To test this, I planted several vines of the same type at the same time, then fertilized them with the same type of fish. The time to peak grape count differed radically.

With regards to the Residual Sugar taking 27.5hrs, that sounds suspiciously like a Teppyday (24hrs of server 'time' is often 26hrs or so due to lag/slippage). Try timing it ingame by using timestamps in a chat (/ts to turn on) - RS probably increases when the vine ticks over the day boundary. (FaceAnkh)
