According to T2 info, coconut trees make a coconut every teppyhour (so every three in-game hours). This is probably still true but it would be nice if someone could verify it.
Keep in mind that coconut trees have no maximum for the number of coconuts they can have available for harvest, and coconuts have 3 bulk. If you harvest from a tree that was left alone for a long time it may dump hundreds of coconuts on you and pin you down.
You can use a kitchen to separate a coconut into 1 coconut water and 1 coconut meat. This action has a 10-second Strength timer.
