This is my ingredient testing data. The updated equations in the T3 Beer Spreadsheet are based on these numbers.
One of the things I discovered was that basing the equations on the actual "tick" number makes them much more accurate. The brewing cycle is divided up into 12 second "ticks" - making it easier to add ingredients at the same time, since you have 12 seconds in each "tick" to add them. While most recipes you see on the Wiki will use the T2 convention for entry times of 1180 and 20 (for beginning and end - also used in the T2 BeerCalc spreadsheet), my T3 BeerCalc spreadsheet uses the numbers that correspond to the actual ticks when the ingredients were entered.
My testing also confirmed that the game rounds to the nearest tick, so the window to enter ingredients is +/- 6 seconds around each tick. The first tick occurs at 1200 seconds (or, looking at it another way, at zero seconds because the system counts down from 1200), so 1200 to 1195 seconds is included in that tick (in other words the first tick is just 6 seconds long). 1194-1183 seconds corresponds to the second tick centered around the -12 tick at 1188. And 1182 to 1171 is centered around the third tick at 1176. So you can see that the old convention of using 1180 falls within that third tick, and I used 1176 for my ingredient testing to be absolutely sure that all my data resulted from adding ingredients at exactly the same time, and at a time that corresponded to the old data on the wiki.
Likewise, 24 seconds corresponds to the third tick from the end of the brewing phase, encompassing 30-19 seconds, centered around 24. And you can see that the old convention of using 20 seconds for this tick falls within that range. However, it is worth noting that 20 seconds comes awfully close to the end of that range, just as 1180 came awfully close to the start of the range for the third tick. This may have resulted in imprecise results for some prior tests and recipes, since people may have thought that a second ingredient added right after 20 seconds would fall within the same tick, but in reality they only had 1 second left to add another ingredient within that same tick.
